Description

These Kid-Friendly Veggie Pinwheel Wraps are a quick and easy snack or lunch idea perfect for busy parents. They are packed with nutritious vegetables and designed to be appealing even to picky eaters.


Ingredients

  • 2 large whole wheat tortillas or flatbreads
  • 4 tablespoons cream cheese (softened)
  • 1/4 cup finely grated carrots
  • 1/4 cup finely diced cucumber
  • 2 tablespoons finely chopped bell pepper (any color)
  • 1 tablespoon finely chopped fresh dill or parsley (optional)
  • Pinch of salt (optional)

Instructions

  1. Lay the tortillas flat on a clean surface.
  2. Spread 2 tablespoons of softened cream cheese evenly over each tortilla, going almost to the edges.
  3. In a small bowl, combine the grated carrots, diced cucumber, diced bell pepper, and optional fresh herbs. If using, add a tiny pinch of salt and mix well.
  4. Sprinkle half of the vegetable mixture evenly over the cream cheese on each tortilla.
  5. Starting from one end, tightly roll up each tortilla. Make sure it’s snug to prevent the filling from falling out.
  6. Once rolled, use a sharp knife to slice each tortilla into 1-inch thick pinwheels.
  7. Arrange the pinwheels on a plate and serve immediately, or store them in an airtight container in the refrigerator for up to 24 hours.
