- 2 large whole wheat tortillas or flatbreads
- 4 tablespoons cream cheese (softened)
- 1/4 cup finely grated carrots
- 1/4 cup finely diced cucumber
- 2 tablespoons finely chopped bell pepper (any color)
- 1 tablespoon finely chopped fresh dill or parsley (optional)
- Pinch of salt (optional)
Instructions
- Lay the tortillas flat on a clean surface.
- Spread 2 tablespoons of softened cream cheese evenly over each tortilla, going almost to the edges.
- In a small bowl, combine the grated carrots, diced cucumber, diced bell pepper, and optional fresh herbs. If using, add a tiny pinch of salt and mix well.
- Sprinkle half of the vegetable mixture evenly over the cream cheese on each tortilla.
- Starting from one end, tightly roll up each tortilla. Make sure it’s snug to prevent the filling from falling out.
- Once rolled, use a sharp knife to slice each tortilla into 1-inch thick pinwheels.
- Arrange the pinwheels on a plate and serve immediately, or store them in an airtight container in the refrigerator for up to 24 hours.
