Description

A quick and easy grilled cheese sandwich packed with hidden veggies, perfect for picky eaters.


Ingredients

  • 2 slices bread
  • 2 tablespoons butter or margarine, softened
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons finely grated vegetables (zucchini, carrot, or spinach)

Instructions

  1. Spread butter on one side of each bread slice.
  2. Mix grated vegetables with shredded cheese.
  3. Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
  4. Sprinkle the cheese and veggie mixture over the bread in the skillet.
  5. Top with the second slice of bread, butter-side up.
  6. Cook for 3-4 minutes per side, or until golden brown and cheese is melted.
