- 2 slices bread
- 2 tablespoons butter or margarine, softened
- 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
- 2 tablespoons finely grated vegetables (zucchini, carrot, or spinach)
Instructions
- Spread butter on one side of each bread slice.
- Mix grated vegetables with shredded cheese.
- Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
- Sprinkle the cheese and veggie mixture over the bread in the skillet.
- Top with the second slice of bread, butter-side up.
- Cook for 3-4 minutes per side, or until golden brown and cheese is melted.
- Slice and serve warm.
Notes
- Finely grating the vegetables helps them blend seamlessly into the cheese.
- You can use any cheese your child likes.
- Keep the heat medium to prevent burning the bread before the cheese melts.
