Description

These Kid-Friendly Veggie-Loaded Turkey Sloppy Joes are a family favorite. They are quick, healthy, and a great way to get kids to eat more vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 carrot, grated
  • 1/2 cup ketchup
  • 1/4 cup tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Hamburger buns

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat.
  2. Add chopped onion, bell pepper, and grated carrot to the skillet. Cook until vegetables are softened, about 5-7 minutes.
  3. Stir in ketchup, tomato paste, brown sugar, Worcestershire sauce, mustard, and garlic powder. Season with salt and pepper.
  4. Bring the mixture to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  5. Serve the sloppy joe mixture on hamburger buns.
