These Kid-Friendly Veggie-Loaded Turkey Sloppy Joes are a family favorite. They are quick, healthy, and a great way to get kids to eat more vegetables.

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 1 carrot, grated
- 1/2 cup ketchup
- 1/4 cup tomato paste
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Hamburger buns
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add chopped onion, bell pepper, and grated carrot to the skillet. Cook until vegetables are softened, about 5-7 minutes.
- Stir in ketchup, tomato paste, brown sugar, Worcestershire sauce, mustard, and garlic powder. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
- Serve the sloppy joe mixture on hamburger buns.
Notes
- Finely chop the vegetables so picky eaters might not notice them.
- You can use different vegetables like zucchini or mushrooms.
- Serve with your kids’ favorite sides like fruit or sweet potato fries.
