Description

This kid-friendly vegan chocolate pudding recipe is quick, easy, and uses simple ingredients to create a delicious and healthy treat that even picky eaters will love. It’s a perfect dessert or snack for busy parents.


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups unsweetened plant-based milk (almond, soy, or oat milk work well)
  • 2 teaspoons vanilla extract

Instructions

  1. In a medium saucepan, whisk together the cocoa powder, sugar, cornstarch, and salt until well combined.
  2. Gradually whisk in the plant-based milk until smooth and no lumps remain.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. This usually takes about 5-7 minutes.
  4. Once boiling, continue to cook and stir for 1 minute to ensure the cornstarch is fully cooked.
  5. Remove the saucepan from the heat and stir in the vanilla extract.
  6. Pour the pudding into individual serving dishes or a large bowl.
  7. Cover the surface of the pudding directly with plastic wrap to prevent a skin from forming.
  8. Refrigerate for at least 2 hours, or until thoroughly chilled and set.
  9. Serve cold and enjoy!

Notes

  • For a richer chocolate flavor, you can add 1-2 tablespoons of dairy-free chocolate chips to the hot pudding after removing it from the heat, stirring until melted.
  • If your pudding seems too thin, you can return it to the heat and cook for a few more minutes, stirring constantly. If it’s too thick, you can whisk in a little more plant-based milk until it reaches your desired consistency.
  • This pudding can be stored in an airtight container in the refrigerator for up to 3-4 days.
