Description

This recipe is for a kid-friendly unicorn fruit sorbet, perfect for busy parents looking for an easy, appealing, and healthy treat for their children.


Ingredients

Scale
  • 2 cups frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1/2 cup frozen raspberries
  • 1/4 cup coconut milk (or any milk of choice)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1/4 teaspoon vanilla extract
  • Natural food coloring (optional, for vibrant colors)

Instructions

  1. Divide the frozen mango and pineapple into two separate portions.
  2. In a blender, combine one portion of mango and pineapple with half of the coconut milk, vanilla extract, and honey/maple syrup (if using). Blend until smooth and creamy. If desired, add a drop of yellow or orange natural food coloring for a vibrant color. Transfer this mixture to a bowl and place it in the freezer while you prepare the next layer.
  3. Clean the blender. Add the remaining mango and pineapple to the blender along with the frozen raspberries, the rest of the coconut milk, and honey/maple syrup (if using). Blend until smooth and creamy. If desired, add a drop of pink or purple natural food coloring for a vibrant color.
  4. Retrieve the first sorbet mixture from the freezer. Layer the pink/purple sorbet on top of the yellow/orange sorbet in serving glasses or bowls.
  5. Serve immediately for a soft-serve consistency, or freeze for 30 minutes to an hour for a firmer sorbet.
  6. Garnish with fresh fruit or sprinkles if desired.

Notes

  • For picky eaters like my Leo, I sometimes sneak in a small handful of spinach into the green layer; they never taste it!
  • Mia loves helping with this recipe, especially choosing the fruit colors. It’s a great way to get kids involved in the kitchen.
  • You can use any combination of frozen fruits you like. Blueberries, bananas, and peaches work well too.
  • Adjust the amount of milk to achieve your desired consistency.
  • If your blender struggles, add a tiny bit more liquid, but be careful not to make it too watery.
