Description

This Kid-Friendly Turkey Shepherd’s Pie is a simple and comforting meal, perfect for busy parents. It features a savory turkey and vegetable base topped with creamy mashed potatoes, designed to be a hit with even the pickiest eaters.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 medium potatoes, peeled and quartered
  • 1/4 cup milk (or as needed)
  • 2 tablespoons butter
  • Optional: 1/2 cup shredded cheddar cheese for topping

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until no longer pink. Drain any excess fat.
  2. Add chopped onion and diced carrots to the skillet. Cook for 5-7 minutes, or until vegetables begin to soften.
  3. Stir in frozen peas and corn, chicken broth, tomato paste, and dried thyme. Season with salt and pepper. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes, or until vegetables are tender.
  4. While the turkey mixture simmers, boil the quartered potatoes in a large pot of salted water for 15-20 minutes, or until very tender.
  5. Drain the potatoes well. Return them to the pot and mash them with milk and butter until smooth and creamy. Season with salt and pepper.
  6. Preheat oven to 375°F (190°C).
  7. Pour the cooked turkey and vegetable mixture into a 9×13 inch baking dish.
  8. Carefully spread the mashed potatoes evenly over the turkey mixture. If using, sprinkle shredded cheese on top of the mashed potatoes.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbling.
  10. Let stand for a few minutes before serving.

Notes

  • For extra veggies, add finely chopped bell peppers or zucchini to the turkey mixture.
  • If your kids prefer a smoother texture, you can lightly blend a portion of the vegetable mixture before adding it to the baking dish.
