- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, finely chopped
- 2 carrots, peeled and diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 4 medium potatoes, peeled and quartered
- 1/4 cup milk (or as needed)
- 2 tablespoons butter
- Optional: 1/2 cup shredded cheddar cheese for topping
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until no longer pink. Drain any excess fat.
- Add chopped onion and diced carrots to the skillet. Cook for 5-7 minutes, or until vegetables begin to soften.
- Stir in frozen peas and corn, chicken broth, tomato paste, and dried thyme. Season with salt and pepper. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes, or until vegetables are tender.
- While the turkey mixture simmers, boil the quartered potatoes in a large pot of salted water for 15-20 minutes, or until very tender.
- Drain the potatoes well. Return them to the pot and mash them with milk and butter until smooth and creamy. Season with salt and pepper.
- Preheat oven to 375°F (190°C).
- Pour the cooked turkey and vegetable mixture into a 9×13 inch baking dish.
- Carefully spread the mashed potatoes evenly over the turkey mixture. If using, sprinkle shredded cheese on top of the mashed potatoes.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbling.
- Let stand for a few minutes before serving.
Notes
- For extra veggies, add finely chopped bell peppers or zucchini to the turkey mixture.
- If your kids prefer a smoother texture, you can lightly blend a portion of the vegetable mixture before adding it to the baking dish.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
