Description

Learn how to make kid-friendly turkey meatball subs that are easy, nutritious, and a hit with even the pickiest eaters. This recipe, tested by Sarah’s own kids, Leo and Mia, simplifies mealtime for busy parents.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 (24 oz) jar marinara sauce
  • 6 small hoagie rolls or hot dog buns
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined. Do not overmix.
  2. Form the mixture into 1-inch meatballs. You should get about 20-24 meatballs.
  3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. They don’t need to be cooked through at this stage.
  4. Pour marinara sauce over the meatballs in the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until meatballs are cooked through.
  5. Preheat your oven to 375°F (190°C).
  6. Slice the hoagie rolls or buns lengthwise, but not all the way through.
  7. Spoon several meatballs and some sauce into each roll.
  8. Top with shredded mozzarella cheese.
  9. Place the subs on a baking sheet and bake for 5-7 minutes, or until the cheese is melted and bubbly and the rolls are lightly toasted.
  10. Serve warm and watch your kids enjoy!

Notes

  • For picky eaters, you can finely grate some zucchini or carrots into the meatball mixture.
  • If you don’t have hoagie rolls, hot dog buns work great for smaller hands.
  • Make a double batch of meatballs and freeze half for a quick meal later.
  • Leftover meatballs and sauce can be stored in an airtight container in the refrigerator for up to 3 days.
