Ingredients
Scale
- 2 tbsp unsalted butter
- 8 (6-inch) flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup shredded mozzarella cheese
- Optional: cooked shredded chicken, black beans, or finely chopped cooked vegetables
Instructions
- Melt 1 tablespoon of butter in a large non-stick skillet or on a griddle over medium heat.
- Place 4 tortillas in the skillet.
- Sprinkle about 2 tablespoons of the mixed cheeses evenly over each tortilla. If adding optional fillings, sprinkle them over half of each tortilla.
- Cook for 2-3 minutes, or until the cheese begins to melt and the bottom of the tortillas are lightly golden.
- Fold each tortilla in half, pressing gently with a spatula.
- Cook for another 1-2 minutes on each side, until golden brown and the cheese is fully melted and gooey.
- Remove the quesadillas from the skillet and set aside.
- Add the remaining 1 tablespoon of butter to the skillet and repeat the process with the remaining 4 tortillas and cheese.
- Slice the quesadillas into wedges and serve warm with your child’s favorite dippings like salsa, guacamole, or sour cream.
Notes
- For picky eaters, involve them in the process by letting them sprinkle the cheese.
- Vary the cheese types based on your child’s preference.
- Add finely chopped cooked vegetables like spinach or bell peppers for extra nutrition.
- These quesadillas are great for meal prep; cook them in advance and reheat gently in a pan or microwave.
