- 6 large eggs
- 1/4 cup milk
- 1/2 pound cooked ground beef or turkey (or 1 can black beans, rinsed and drained)
- 1 tablespoon taco seasoning (mild)
- 4–6 small flour or corn tortillas (6-inch) or 6 slices sandwich bread
- 1 cup shredded cheddar or Monterey Jack cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 6-cup muffin tin.
- If using meat, cook and drain it. Stir in taco seasoning. If using beans, heat them with taco seasoning.
- In a bowl, whisk eggs and milk. Season with salt and pepper.
- If using tortillas, cut them into rounds slightly larger than the muffin cups. Press one into each cup. If using bread, flatten slices slightly and press one into each cup.
- Divide the meat/bean mixture among the cups.
- Pour the egg mixture over the meat/beans in each cup.
- Sprinkle cheese over the top of each cup.
- Bake for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- Use mild taco seasoning for younger children.
- Offer toppings like salsa, sour cream, or diced avocado on the side.
- These cups can be made ahead and reheated gently.
- Adjust fillings to suit your child’s preferences.
