Description

These Kid-Friendly Sweet Potato Truffle Bites are a delicious and easy way to get some extra veggies into your little ones’ diets. They’re naturally sweet, soft, and perfect for tiny hands.

Ingredients

Scale
  • 1 medium sweet potato, cooked and mashed (about 1 cup)
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 2 tablespoons mini chocolate chips (for extra fun!)
  • Optional coating: unsweetened shredded coconut, finely chopped nuts, or more cocoa powder

Instructions

  1. In a medium bowl, combine the mashed sweet potato, almond flour, cocoa powder, maple syrup (or honey), vanilla extract, and salt. Mix until well combined and a dough forms.
  2. If using, stir in the mini chocolate chips.
  3. Roll the mixture into small, bite-sized balls (about 1-inch in diameter). This is a fun step for kids to help with!
  4. If desired, roll the truffle bites in your chosen coating (shredded coconut, chopped nuts, or cocoa powder).
  5. Place the truffle bites on a plate or in an airtight container and refrigerate for at least 30 minutes to allow them to firm up.
  6. Serve chilled and enjoy!

Notes

  • You can cook the sweet potato by baking it until very tender, boiling it, or microwaving it. Just make sure it’s soft enough to mash smoothly.
  • These truffle bites are great for meal prep. Make a batch at the beginning of the week for quick snacks.
  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • For a nut-free version, you can try using oat flour instead of almond flour, though the texture might be slightly different.
