Description

These Kid-Friendly Sweet Potato & Black Bean Burritos are a perfect meal for busy parents. They are quick, easy, and packed with nutrition, designed to appeal to little palates and make mealtimes enjoyable for the whole family.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium sweet potato, peeled and diced (about 2 cups)
  • 1/2 cup finely diced onion
  • 1 clove garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder (optional, for mild flavor)
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • Optional toppings: salsa, sour cream, avocado, chopped cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potato and onion. Cook, stirring occasionally, for 8-10 minutes, or until sweet potato is tender.
  3. Stir in minced garlic, black beans, corn, cumin, and chili powder (if using). Cook for another 3-5 minutes, until heated through.
  4. Season with salt and pepper to taste.
  5. Warm tortillas according to package directions (microwave or skillet).
  6. Lay out each tortilla. Spoon about 1/4 cup of the sweet potato and black bean mixture onto the center of each tortilla.
  7. Sprinkle with shredded cheese.
  8. Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito.
  9. Serve immediately with your favorite toppings.

Notes

  • For picky eaters, you can mash the sweet potato mixture slightly before filling the burritos to hide the texture of the beans or corn.
