Description

This Kid-Friendly Summer Berry Pound Cake is a simple and delicious dessert perfect for families. It combines juicy summer berries with a tender pound cake, making it a hit even with picky eaters.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 ½ cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 tablespoon all-purpose flour (for dusting berries)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together 1 ½ cups flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the eggs one at a time, incorporating each egg fully before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. In a small bowl, gently toss the mixed fresh berries with 1 tablespoon of flour. This helps prevent them from sinking to the bottom of the cake.
  7. Fold the floured berries into the cake batter.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  11. Once cooled, dust with powdered sugar if desired.

Notes

  • Use fresh, ripe summer berries for the best flavor.
  • Do not overmix the batter; mix until just combined for a tender cake.
  • Tossing berries in flour helps them suspend evenly in the cake.
  • This cake stores well at room temperature in an airtight container for up to 3 days, or in the refrigerator for up to 5 days.
