Description

Easy and healthy egg bites with spinach and cheese, perfect for a quick kid-friendly breakfast or snack.


Ingredients

  • 8 large eggs
  • 1/2 cup milk (any kind)
  • 1 cup finely chopped spinach
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: a pinch of garlic powder or onion powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with silicone liners.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the chopped spinach, shredded cheese, salt, pepper, and any optional seasonings.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about two-thirds full.
  5. Bake for 18-22 minutes, or until the egg bites are set and lightly golden around the edges.
  6. Let them cool slightly in the muffin tin before removing.
