Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line with silicone liners.
- In a large bowl, whisk together the eggs and milk until well combined.
- Stir in the chopped spinach, shredded cheese, salt, pepper, and any optional seasonings.
- Pour the mixture evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until the egg bites are set and lightly golden around the edges.
- Let them cool slightly in the muffin tin before removing.
Notes
- Egg bites can be stored in an airtight container in the refrigerator for up to 3-4 days.
- Reheat them in the microwave for a few seconds or enjoy them cold.
