Ingredients

  • 1/2 cup almond butter (or other nut/seed butter)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons granulated sugar (for rolling)
  • 1/2 teaspoon cinnamon (for rolling)

Instructions

  1. Combine oats, almond butter, maple syrup, vanilla extract, cinnamon, and salt in a medium bowl.
  2. Mix well until a dough forms. If the mixture is too sticky, add a little more oats. If too dry, add a tiny bit more maple syrup.
  3. In a small separate bowl, mix the granulated sugar and 1/2 teaspoon cinnamon for rolling.
  4. Roll the dough into 1-inch balls.
  5. Roll each ball in the cinnamon-sugar mixture until coated.
  6. Place the energy bites on a plate or in an airtight container.
  7. Refrigerate for at least 30 minutes to firm up.
  8. Store in an airtight container in the refrigerator for up to a week.
