Description
Looking for a super quick and easy breakfast that kids love? Smashed eggs on toast is a winner in our house. It’s simple, nutritious, and you can adjust it for even the pickiest eaters. My Leo and Mia gobble this up!
Ingredients
Scale
- 2–4 large eggs
- 2 slices bread (whole wheat or white)
- 1 tablespoon butter or oil
- Pinch of salt (optional)
- Pinch of pepper (optional)
Instructions
- Cook the eggs. You can scramble them gently in a pan with a little butter or oil, or hard-boil them and mash them with a fork. For smashing on toast, scrambled or soft-boiled and mashed works great.
- While the eggs cook, toast your bread to your liking.
- Spread a little butter or oil on the warm toast.
- Top the toast with the cooked eggs. If using scrambled, just pile them on. If using boiled, mash them lightly onto the toast with a fork.
- Add a tiny pinch of salt or pepper if your child likes it.
- Serve immediately.
Notes
- For younger toddlers, mash the eggs very well.
- Offer different toppings like a sprinkle of cheese, a tiny bit of avocado, or a dash of ketchup on the side.
- Let older kids help smash the eggs on the toast themselves.
- Cut the toast into fun shapes if that encourages your child to eat.
