- 1 small onion, finely diced
- 1 bell pepper (any color), finely diced
- 1 cup corn (frozen or canned, drained)
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp garlic powder
- Pinch of salt and pepper
- 2 cups cooked rice (white or brown)
- Optional toppings: shredded cheese, sour cream or Greek yogurt, avocado slices, salsa, chopped cilantro
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add diced onion and bell pepper. Cook for 5-7 minutes, or until softened.
- Stir in corn, black beans, diced tomatoes (with their juice), chili powder, cumin, garlic powder, salt, and pepper.
- Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 10-15 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken slightly.
- While the sauce simmers, prepare your rice according to package directions if you don’t have it cooked already.
- To serve, place a scoop of cooked rice in each bowl. Top with a generous amount of the rice and bean veggie mixture.
