Description

This Kid-Friendly Rainbow Veggie Pizza is a fun way to get your kids to eat their vegetables. We hide some of the veggies in the sauce and arrange the rest in a colorful rainbow on top.


Ingredients

  • 1 pre-made pizza crust
  • 1/2 cup pizza sauce (see notes for hiding veggies)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup finely diced orange bell pepper
  • 1/4 cup finely diced yellow bell pepper
  • 1/4 cup finely diced green bell pepper
  • 1/4 cup finely diced purple onion

Instructions

  1. Preheat your oven according to the pizza crust package directions.
  2. Spread the pizza sauce evenly over the crust.
  3. Sprinkle half of the mozzarella cheese over the sauce.
  4. Arrange the diced vegetables in colorful rows to create a rainbow pattern on the pizza.
  5. Sprinkle the remaining cheese over the vegetables.
  6. Bake for the time recommended on the pizza crust package, or until the crust is golden and the cheese is melted and bubbly.
  7. Let cool slightly before slicing and serving.

Notes

  • To hide veggies in the sauce, you can blend cooked carrots, zucchini, or spinach into your favorite store-bought or homemade pizza sauce.
  • Cutting the vegetables into small, uniform pieces makes them more appealing to kids.
  • Let your kids help arrange the veggie rainbow – it makes it more fun for them!
  • If your kids are hesitant about the purple onion, you can omit it or use finely minced red bell pepper in its place for the ‘purple’ row.
