Description
This Kid-Friendly Rainbow Veggie Pizza is a fun way to get your kids to eat their vegetables. We hide some of the veggies in the sauce and arrange the rest in a colorful rainbow on top.

- 1 pre-made pizza crust
- 1/2 cup pizza sauce (see notes for hiding veggies)
- 1 cup shredded mozzarella cheese
- 1/4 cup finely diced red bell pepper
- 1/4 cup finely diced orange bell pepper
- 1/4 cup finely diced yellow bell pepper
- 1/4 cup finely diced green bell pepper
- 1/4 cup finely diced purple onion
Instructions
- Preheat your oven according to the pizza crust package directions.
- Spread the pizza sauce evenly over the crust.
- Sprinkle half of the mozzarella cheese over the sauce.
- Arrange the diced vegetables in colorful rows to create a rainbow pattern on the pizza.
- Sprinkle the remaining cheese over the vegetables.
- Bake for the time recommended on the pizza crust package, or until the crust is golden and the cheese is melted and bubbly.
- Let cool slightly before slicing and serving.
Notes
- To hide veggies in the sauce, you can blend cooked carrots, zucchini, or spinach into your favorite store-bought or homemade pizza sauce.
- Cutting the vegetables into small, uniform pieces makes them more appealing to kids.
- Let your kids help arrange the veggie rainbow – it makes it more fun for them!
- If your kids are hesitant about the purple onion, you can omit it or use finely minced red bell pepper in its place for the ‘purple’ row.
