- 4 large flour tortillas
- 1/2 cup cream cheese or hummus
- 1/4 cup shredded carrots
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped yellow bell pepper
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped purple cabbage
- 1/4 cup spinach leaves, finely chopped
- 1/2 cup crushed tortilla chips or crispy lettuce
- 1/2 cup cooked shredded chicken, black beans, or chickpeas (optional)
Instructions
- Lay a tortilla flat.
- Spread cream cheese or hummus over the tortilla, leaving a border.
- Sprinkle carrots, bell peppers, cabbage, and spinach over the spread.
- Add shredded chicken, beans, or chickpeas if using.
- Sprinkle crushed tortilla chips or add crispy lettuce in the center.
- Fold the bottom edge of the tortilla up towards the center.
- Fold the sides inward, creating a hexagonal shape.
- Flip the wrap over.
- Heat a pan over medium heat.
- Place the wrap seam-side down in the pan.
- Cook for 2-3 minutes per side, until golden and crispy.
- Remove from pan and let cool slightly before slicing.
