- Optional: 1/4 cup mini chocolate chips or chopped dried fruit
Instructions
- In a medium bowl, combine the rolled oats, pumpkin puree, nut butter, maple syrup, pumpkin pie spice, vanilla extract, and salt.
- Mix everything together until well combined. If using, stir in the mini chocolate chips or dried fruit.
- Roll the mixture into bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to firm up.
- Store the energy bites in an airtight container in the refrigerator for up to a week.
