- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup brown sugar (or maple syrup)
- 1 large egg
- 1 1/2 cups milk (any kind)
- 1/2 cup pumpkin puree
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, whisk together the oats, baking powder, pumpkin pie spice, cinnamon, and salt.
- In a separate bowl, whisk together the brown sugar, egg, milk, pumpkin puree, melted butter or oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until the top is set and lightly golden.
- Let cool slightly before serving.
Notes
- You can add chocolate chips, nuts, or dried fruit for extra flavor and texture.
- This baked oatmeal can be stored in the refrigerator for up to 4 days.
