Description

Easy and fun egg muffins with pizza flavors perfect for kids. Make these for a quick breakfast, snack, or lunchbox addition.


Ingredients

Scale
  • 12 large eggs
  • 1/4 cup milk
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • Optional toppings: mini pepperoni, chopped bell peppers, mushrooms, spinach
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Pour about 1 tablespoon of pizza sauce into the bottom of each muffin cup.
  4. Evenly distribute the shredded cheese among the muffin cups, over the sauce.
  5. Add any optional toppings you like into each cup.
  6. Pour the egg mixture over the cheese and toppings, filling each cup about three-quarters full.
  7. Bake for 15-20 minutes, or until the egg muffins are set and lightly golden around the edges.
  8. Let cool in the muffin tin for a few minutes before removing.
  9. Serve warm or at room temperature.

Notes

  • Customize with your child’s favorite pizza toppings.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • These can be reheated gently in the microwave.
