- 12 large eggs
- 1/4 cup milk
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Optional toppings: mini pepperoni, chopped bell peppers, mushrooms, spinach
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Pour about 1 tablespoon of pizza sauce into the bottom of each muffin cup.
- Evenly distribute the shredded cheese among the muffin cups, over the sauce.
- Add any optional toppings you like into each cup.
- Pour the egg mixture over the cheese and toppings, filling each cup about three-quarters full.
- Bake for 15-20 minutes, or until the egg muffins are set and lightly golden around the edges.
- Let cool in the muffin tin for a few minutes before removing.
- Serve warm or at room temperature.
Notes
- Customize with your child’s favorite pizza toppings.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- These can be reheated gently in the microwave.
