Ingredients

  • 1 pound spaghetti or linguine
  • 2 tablespoons sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup frozen peas
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger (optional)
  • Water, as needed for thinning
  • Chopped peanuts or sesame seeds for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat sesame oil in a large skillet or wok over medium heat. Add bell pepper and carrots. Cook for 5-7 minutes until slightly tender-crisp. Add peas and cook for another 2-3 minutes.
  3. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, and ginger (if using) until smooth. If the sauce is too thick, add a tablespoon or two of water until it reaches your desired consistency.
  4. Add the cooked pasta and vegetables to the skillet with the sauce. Toss everything together until the pasta and vegetables are evenly coated.
  5. Serve warm, garnished with chopped peanuts or sesame seeds if desired.
