- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mash the bananas until smooth.
- Stir in the peanut butter, honey or maple syrup, and vanilla extract until well combined.
- Add the rolled oats and chocolate chips (if using) and mix until everything is evenly distributed.
- Spread the mixture evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Let cool completely in the pan before cutting into bars.
Notes
- Use ripe bananas for the best flavor and sweetness.
- You can substitute almond butter or sunflower seed butter for peanut butter if needed.
- Store leftover bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
