Ingredients
Scale
- 1 cup frozen sliced peaches
- 1 cup frozen mango chunks
- 1/2 cup unsweetened almond milk (or milk of choice)
- 2 tablespoons chia seeds
- 1/2 teaspoon vanilla extract (optional)
- 1/4 cup plain Greek yogurt (or dairy-free yogurt)
- Fresh fruit for topping (optional)
Instructions
- In a blender, combine the frozen peaches, frozen mango, almond milk, and vanilla extract (if using). Blend until smooth and creamy.
- In a small bowl, whisk together the Greek yogurt and chia seeds.
- In small glasses or jars, layer the fruit smoothie mixture with the chia yogurt mixture, alternating layers until the glass is full.
- Top with fresh fruit if desired.
- Serve immediately or refrigerate for up to 2 hours for a firmer parfait.
Notes
- For a thicker smoothie, use less milk. For a thinner smoothie, add more milk.
- If your children prefer a sweeter taste, add a touch of maple syrup or honey to the smoothie.
- You can prepare these parfaits the night before for an even quicker morning.
- My son, Leo, loves these with a sprinkle of granola on top for extra crunch.
- Mia prefers hers with a little extra mango, so adjust fruit ratios to your child’s preference.
