Description

This kid-friendly one-pot taco pasta is a quick and easy meal perfect for busy parents. It combines the flavors of tacos with pasta, making it a hit with children and simplifying cleanup.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (1.25 ounce) packet taco seasoning
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups beef broth
  • 1 cup water
  • 8 ounces elbow macaroni or small pasta
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, crushed tortilla chips, chopped fresh cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef or turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Stir in taco seasoning, diced tomatoes (with their juice), and rinsed black beans. Mix well.
  4. Pour in beef broth and water. Bring the mixture to a boil.
  5. Add the uncooked pasta and stir. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  6. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Serve hot with your favorite taco pasta toppings like sour cream, salsa, crushed tortilla chips, or fresh cilantro.

Notes

  • For picky eaters, you can blend the diced tomatoes before adding them to hide the texture.
  • Adjust the amount of taco seasoning to your family’s preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
