Description

This kid-friendly one-ingredient banana ice cream is a sweet, simple, and healthy treat perfect for busy parents. It’s easy to make and a great way to use ripe bananas, appealing to even picky eaters like Leo and Mia.


Ingredients

  • 2–3 ripe bananas (the riper, the sweeter!)

Instructions

  1. Peel the ripe bananas and slice them into 1-inch thick rounds.
  2. Place the banana slices in a single layer on a baking sheet lined with parchment paper.
  3. Freeze the banana slices for at least 2-3 hours, or until solid. This is a great prep-ahead step!
  4. Transfer the frozen banana slices to a food processor or a high-speed blender.
  5. Process the bananas, scraping down the sides as needed. It will go from crumbly to thick, then creamy, resembling soft-serve ice cream. Be patient – it takes a few minutes!
  6. Serve immediately for a soft-serve consistency, or transfer to an airtight container and freeze for another 30-60 minutes for a firmer scoopable ice cream.

Notes

  • For variations, you can add a tablespoon of cocoa powder for chocolate banana ice cream, a spoonful of peanut butter, or a splash of vanilla extract during processing.
