Description

Make a quick and easy no-cook chicken salad perfect for kids. Serve it in crisp lettuce cups for a simple, healthy meal.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or finely diced
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped celery (optional)
  • 1/4 cup red grapes, halved or quartered (optional)
  • Salt to taste
  • Black pepper to taste
  • Butter or romaine lettuce leaves, washed and dried

Instructions

  1. In a medium bowl, combine the cooked chicken and mayonnaise.
  2. Add the chopped celery and grapes, if using.
  3. Season with salt and pepper.
  4. Mix everything together until well combined.
  5. Spoon the chicken salad mixture into individual lettuce leaves.
  6. Serve immediately.

Notes

  • Using leftover rotisserie chicken makes this recipe even faster.
  • Chop the chicken and any add-ins into very small pieces for younger children.
  • Let your kids assemble their own wraps by offering the chicken salad and lettuce separately.
  • Try adding a pinch of sugar or a drizzle of honey to the salad for a touch of sweetness kids often enjoy.
