  • 2 tablespoons mini chocolate chips (optional, for topping)

Instructions

  1. In a medium bowl, combine the pumpkin puree, almond butter, maple syrup, and pumpkin pie spice. Mix until well combined and smooth.
  2. Gradually add the oat flour, mixing until a thick dough forms. If the dough is too sticky, add a little more oat flour, a tablespoon at a time, until it’s workable.
  3. Line a baking sheet with parchment paper. Take small portions of the dough (about 1-2 tablespoons) and roll them into balls. Flatten each ball slightly and use your finger or a small round object (like a piping tip) to create a hole in the center, forming a donut shape.
  4. If using, gently press shredded coconut or mini chocolate chips onto the top of each donut.
  5. Place the formed donuts on the prepared baking sheet.
  6. Refrigerate for at least 30 minutes to allow the donuts to firm up.
  7. Store leftovers in an airtight container in the refrigerator for up to 3 days.
