Easy, no-bake granola oat bars perfect for a quick kid-friendly snack.
Ingredients

- 1 1/2 cups rolled oats
- 1/2 cup rice krispies
- 1/4 cup mini chocolate chips (or other mix-ins like dried fruit or nuts)
- 1/2 cup peanut butter (or other nut butter)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Line an 8×8 inch pan with parchment paper, leaving some overhang.
- In a large bowl, combine the rolled oats, rice krispies, and mini chocolate chips.
- In a separate microwave-safe bowl, heat the peanut butter and honey/maple syrup for about 30-60 seconds, until warm and easily mixable. Stir in the vanilla extract.
- Pour the warm peanut butter mixture into the dry ingredients. Stir until everything is well coated and comes together.
- Transfer the mixture to the prepared pan. Press firmly and evenly into the pan. I like to use the bottom of a glass or a spatula for this.
- Refrigerate for at least 1 hour to set.
- Lift the granola from the pan using the parchment paper and cut into bars.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- You can customize these bars with your kids’ favorite mix-ins like dried cranberries, raisins, chopped nuts (if no allergies), or sprinkles.
- If the mixture is too crumbly, add a little more peanut butter or honey. If it seems too sticky, add a few more oats.
- Make sure to press the mixture down very firmly in the pan so the bars hold together well when cut.
