Description

These whole grain pancakes with mixed berries are a kid-friendly breakfast option that is easy to make.


Ingredients

Scale
  • 1.5 cups whole wheat flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 large egg
  • 1.5 cups milk
  • 2 tbsp melted butter
  • 1 cup mixed berries

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the mixed berries.
  5. Heat a lightly greased griddle or non-stick pan over medium heat.
  6. Pour approximately 1/4 cup of batter for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. Serve warm with your favorite toppings.

Notes

  • You can use any type of milk you prefer.
  • Frozen berries can be used, but do not thaw them before adding to the batter.
  • For a thinner batter, add a little more milk.
