These kid-friendly mini strawberry shortcake shots are a delightful treat, perfect for little hands and picky eaters. They combine fresh strawberries, fluffy whipped cream, and tender shortcake bits in a fun, grab-and-go presentation.

- 1 pound fresh strawberries, hulled and diced
- 2 tablespoons granulated sugar (or to taste)
- 1 teaspoon fresh lemon juice (optional)
- 8 ounces store-bought or homemade shortcake biscuits or pound cake, cut into small cubes
- 1 ½ cups heavy cream, very cold
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, combine the diced strawberries, granulated sugar, and lemon juice (if using). Gently stir and let sit for at least 15 minutes to allow the strawberries to release their juices.
- While the strawberries macerate, prepare the whipped cream. In a large, cold bowl (chilling the bowl and beaters beforehand helps), beat the cold heavy cream with an electric mixer on medium-high speed until it starts to thicken.
- Add the powdered sugar and vanilla extract. Continue beating until stiff peaks form. Be careful not to overbeat, or it will turn grainy.
- To assemble the shortcake shots, grab small shot glasses or mini dessert cups.
- Layer a spoonful of shortcake cubes at the bottom of each glass.
- Spoon a layer of the macerated strawberries over the shortcake.
- Top with a generous dollop of whipped cream.
- Repeat the layers: shortcake, strawberries, and whipped cream, until the glass is full.
- Serve immediately or chill for up to an hour.

- If you don’t have shot glasses, small clear plastic cups or even mini mason jars work wonderfully.
- You can prepare the strawberries and whipped cream ahead of time, but assemble just before serving for the best texture.
