Description

These kid-friendly mini spinach pockets are a perfect way to sneak in veggies. They are easy to make and a hit with even picky eaters like Leo and Mia.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. Once cooled, squeeze out any excess liquid from the spinach. This is important to prevent soggy pockets!
  4. In a medium bowl, combine the cooked spinach, cream cheese, mozzarella cheese, salt, and pepper. Mix well until everything is combined.
  5. Unroll the thawed puff pastry sheet onto a lightly floured surface. Cut the puff pastry into 12 equal squares.
  6. Spoon a small amount of the spinach mixture onto one half of each puff pastry square.
  7. Fold the other half of the pastry over the filling to create a triangle. Press the edges firmly with a fork to seal.
  8. Place the sealed mini spinach pockets onto the prepared baking sheet.
  9. Brush the tops of the pockets with the beaten egg wash.
  10. Bake for 15-18 minutes, or until golden brown and puffed.
  11. Let cool slightly before serving. These are delicious warm or at room temperature.

Notes

  • For extra nutrition, you can add a tablespoon of finely grated carrot or zucchini to the spinach mixture.
  • These mini spinach pockets are great for meal prep. You can bake them ahead of time and store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
  • If you have very picky eaters, you can try finely chopping the spinach before cooking it, so it’s less noticeable.
