Description

Easy and delicious mini meatloaf muffins perfect for kids, designed to be quick, nutritious, and appealing even to picky eaters.


Ingredients

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs (whole wheat or regular)
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely grated carrots (optional, for sneaking in veggies)
  • 2 tbsp finely chopped onion (optional)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup ketchup or BBQ sauce (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine the ground meat, breadcrumbs, milk, egg, grated carrots (if using), chopped onion (if using), Worcestershire sauce, salt, and pepper.
  3. Mix everything gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
  4. Divide the mixture evenly among the 12 muffin cups. You can use a spoon or your hands to shape them into small meatloaf mounds.
  5. Spread about 1 teaspoon of ketchup or BBQ sauce over the top of each mini meatloaf.
  6. Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are cooked through.
  7. Remove from the oven and let them rest in the muffin tin for a few minutes before serving. This helps them hold their shape.
