- 1 lb ground beef or turkey
- 1/2 cup breadcrumbs (whole wheat or regular)
- 1/4 cup milk
- 1 egg
- 1/4 cup finely grated carrots (optional, for sneaking in veggies)
- 2 tbsp finely chopped onion (optional)
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup ketchup or BBQ sauce (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine the ground meat, breadcrumbs, milk, egg, grated carrots (if using), chopped onion (if using), Worcestershire sauce, salt, and pepper.
- Mix everything gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
- Divide the mixture evenly among the 12 muffin cups. You can use a spoon or your hands to shape them into small meatloaf mounds.
- Spread about 1 teaspoon of ketchup or BBQ sauce over the top of each mini meatloaf.
- Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are cooked through.
- Remove from the oven and let them rest in the muffin tin for a few minutes before serving. This helps them hold their shape.
