Description

Make easy mini chocolate chip muffins. These are perfect for kids.


Ingredients

Scale
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a mini muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Fold in the mini chocolate chips.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
