Make easy mini chocolate chip muffins. These are perfect for kids.
Ingredients

- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 3/4 cup milk
- 1/4 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Line a mini muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the egg, milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- Fold in the mini chocolate chips.
- Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins are small and easy for little hands to hold.
- Store cooled muffins in an airtight container at room temperature for up to 3 days.
- You can substitute regular-sized chocolate chips if you do not have mini ones.
