Description

These kid-friendly mini caramel rice puddings are a delightful treat that’s easy to make and perfect for little hands. They’re a comforting dessert that appeals to even picky eaters.

Ingredients

Scale
  • 1/2 cup uncooked white rice
  • 2 cups milk (whole or 2%)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup caramel sauce, plus more for drizzling
  • Mini ramekins or small dessert cups

Instructions

  1. Combine rice, milk, sugar, salt, and vanilla extract in a medium saucepan.
  2. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  3. Reduce heat to low and simmer, uncovered, for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed. Stir frequently to prevent sticking.
  4. Remove from heat and stir in 1/4 cup of caramel sauce until well combined.
  5. Spoon the warm rice pudding into mini ramekins or small dessert cups.
  6. Allow the puddings to cool slightly before serving, or chill them in the refrigerator for at least 1 hour for a cold dessert.
  7. Drizzle with extra caramel sauce before serving, if desired.

Notes

  • For a creamier pudding, use whole milk.
  • You can adjust the amount of sugar to your family’s preference.
  • These mini puddings are great for portion control and make a perfect after-school snack or dessert.
  • My son, Leo, loves these warm, while Mia prefers them chilled, so try both ways to see what your kids prefer!
