- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup caramel sauce, plus more for drizzling
- Mini ramekins or small dessert cups
Instructions
- Combine rice, milk, sugar, salt, and vanilla extract in a medium saucepan.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally.
- Reduce heat to low and simmer, uncovered, for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed. Stir frequently to prevent sticking.
- Remove from heat and stir in 1/4 cup of caramel sauce until well combined.
- Spoon the warm rice pudding into mini ramekins or small dessert cups.
- Allow the puddings to cool slightly before serving, or chill them in the refrigerator for at least 1 hour for a cold dessert.
- Drizzle with extra caramel sauce before serving, if desired.
