Ingredients

  • 1 cup cooked chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 cup finely diced cucumber
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup finely chopped fresh parsley
  • 4 whole wheat pita breads
  • Optional: feta cheese, shredded carrots, Kalamata olives (pitted and finely chopped)

Instructions

  1. To make the hummus, combine chickpeas, tahini, lemon juice, minced garlic, and salt in a food processor. Blend until smooth, adding 1-2 tablespoons of water if needed to reach desired consistency.
  2. In a medium bowl, combine the diced cucumber, red bell pepper, and chopped parsley. If using, add feta cheese, shredded carrots, or chopped olives.
  3. Warm the pita breads according to package directions. You can lightly toast them or warm them in a microwave for a few seconds until pliable.
  4. Carefully cut each pita bread in half to create pockets.
  5. Spread a generous amount of hummus inside each pita pocket.
  6. Fill each pocket with the prepared vegetable mixture.
