Instructions
- To make the hummus, combine chickpeas, tahini, lemon juice, minced garlic, and salt in a food processor. Blend until smooth, adding 1-2 tablespoons of water if needed to reach desired consistency.
- In a medium bowl, combine the diced cucumber, red bell pepper, and chopped parsley. If using, add feta cheese, shredded carrots, or chopped olives.
- Warm the pita breads according to package directions. You can lightly toast them or warm them in a microwave for a few seconds until pliable.
- Carefully cut each pita bread in half to create pockets.
- Spread a generous amount of hummus inside each pita pocket.
- Fill each pocket with the prepared vegetable mixture.
