Description

Mini pancake bites infused with maple syrup. Easy for kids to eat.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup maple syrup (for batter)
  • Additional maple syrup, for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together milk, egg, melted butter, and 1/4 cup maple syrup.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. Bake for 12 to 15 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let cool in the tin for a few minutes before removing.
  8. Serve warm with extra maple syrup for dipping.

Notes

  • Use non-stick cooking spray generously for easy removal.
  • Bites are best served fresh.
