Description
Mini pancake bites infused with maple syrup. Easy for kids to eat.
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/4 cup maple syrup (for batter)
- Additional maple syrup, for serving
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, egg, melted butter, and 1/4 cup maple syrup.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
- Bake for 12 to 15 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let cool in the tin for a few minutes before removing.
- Serve warm with extra maple syrup for dipping.
Notes
- Use non-stick cooking spray generously for easy removal.
- Bites are best served fresh.
