Description
Create this simple and tasty pineapple fried rice recipe your kids will love. It is quick to make and perfect for busy weeknights. My kids, Leo and Mia, enjoy this dish.
Ingredients
Scale
- 2 cups cooked rice (day-old works best)
- 1 pound boneless, skinless chicken breast, diced
- 1 cup frozen peas and carrots blend
- 1 cup canned pineapple chunks, drained
- 2 large eggs, lightly beaten
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 2 tablespoons cooking oil
Instructions
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and cook until browned and cooked through.
- Push the chicken to one side of the pan. Pour in the beaten eggs and scramble them until cooked. Break the eggs into smaller pieces.
- Add the minced garlic, peas, and carrots to the pan. Cook, stirring, for 2-3 minutes until vegetables are slightly tender.
- Add the cooked rice to the pan. Break up any clumps with your spatula.
- Pour the soy sauce and sesame oil over the rice mixture. Stir everything together until well combined and heated through.
- Add the drained pineapple chunks to the pan. Stir gently to distribute evenly.
- Cook for another 1-2 minutes until the pineapple is warm.
- Serve the pineapple fried rice warm.
Notes
- Using leftover, cold rice prevents the fried rice from becoming mushy.
- Adjust the amount of soy sauce to suit your family’s taste.
- Cut the chicken and pineapple into small, bite-sized pieces for toddlers and younger children.
- Feel free to substitute chicken with shrimp, tofu, or leave it vegetarian.
