  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add carrots, butternut squash, and onion. Cook, stirring occasionally, for 8-10 minutes, or until vegetables are tender.
  2. Pour in chicken or vegetable broth, milk, salt, and pepper. Bring to a simmer.
  3. Carefully transfer the vegetable mixture to a blender. Blend until completely smooth and creamy.
  4. Return the pureed vegetable mixture to the pot. Stir in the elbow macaroni.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until macaroni is al dente, stirring occasionally to prevent sticking.
  6. Remove from heat. Stir in cheddar cheese and Parmesan cheese until melted and smooth.
