Description
These date energy balls are a perfect, healthy, and easy snack for kids. They’re naturally sweet and require no baking.
Ingredients
Scale
- 1 cup pitted dates (Medjool work best)
- 1/2 cup rolled oats
- 1/2 cup nuts or seeds (like almonds, walnuts, cashews, or sunflower seeds)
- 2 tablespoons chia seeds or flax seeds
- 1/4 cup unsweetened shredded coconut (optional, for coating)
Instructions
- Combine the dates, oats, nuts/seeds, and chia/flax seeds in a food processor.
- Process until the mixture is finely chopped and starts to stick together. It should resemble a thick dough.
- If the mixture seems too dry, add a teaspoon of water at a time and process again until it forms a ball.
- Roll the mixture into bite-sized balls.
- If using, roll the balls in shredded coconut to coat.
- Store the energy balls in an airtight container in the refrigerator for up to two weeks or freeze for longer storage.
Notes
- You can customize these by adding cocoa powder, vanilla extract, or cinnamon.
- If your child has nut allergies, use sunflower seeds or pumpkin seeds instead.
- These are great for lunchboxes or as a quick after-school snack.
