Description

Simple and delicious chocolate rice krispies treats that are kid-friendly and healthy.

Ingredients

Scale
  • 6 cups puffed rice cereal
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (peanut, almond, or sunflower seed)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1/4 cup mini chocolate chips or sprinkles for topping

Instructions

  1. Line a 9×13 inch pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the puffed rice cereal and cocoa powder. Stir until the cereal is evenly coated.
  3. In a microwave-safe bowl, combine the honey (or maple syrup), nut butter, vanilla extract, and salt.
  4. Microwave for 30-60 seconds, or until the mixture is warm and smooth. Stir well.
  5. Pour the warm wet mixture over the dry cereal and cocoa.
  6. Stir until all the cereal is coated and everything is well combined.
  7. Press the mixture evenly into the prepared pan. You can use the back of a spoon or your hands (lightly greased) to press it down firmly.
  8. If using, sprinkle mini chocolate chips or sprinkles on top and gently press them in.
  9. Refrigerate for at least 30 minutes to set.
  10. Once set, lift the treats out of the pan using the parchment paper overhang and cut into squares.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
