- 1.5 lbs boneless, skinless chicken breasts
- 2 bell peppers (any colors), cut into 1-inch chunks
- 1 large zucchini, cut into 1-inch chunks
- 1 red onion (optional), cut into 1-inch chunks
- 1 cup cherry tomatoes (optional)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cut chicken breasts into 1-inch cubes.
- In a large bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
- Add chicken cubes to the bowl and toss to coat. Marinate for at least 15 minutes.
- Thread chicken and vegetable chunks onto skewers, alternating items. If using wooden skewers, soak them in water for 30 minutes first.
- Preheat grill to medium-high heat.
- Place kabobs on the preheated grill.
- Grill for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
- Remove from grill and serve hot.

- For picky eaters, you can grill the chicken and veggies on separate skewers.
- Cut vegetables into larger chunks if your child prefers them less cooked or easier to handle.
