Description

Make mealtime easy with these kid-friendly grilled chicken and veggie kabobs. Simple ingredients and quick cooking make this a family favorite.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 bell peppers (any colors), cut into 1-inch chunks
  • 1 large zucchini, cut into 1-inch chunks
  • 1 red onion (optional), cut into 1-inch chunks
  • 1 cup cherry tomatoes (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut chicken breasts into 1-inch cubes.
  2. In a large bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
  3. Add chicken cubes to the bowl and toss to coat. Marinate for at least 15 minutes.
  4. Thread chicken and vegetable chunks onto skewers, alternating items. If using wooden skewers, soak them in water for 30 minutes first.
  5. Preheat grill to medium-high heat.
  6. Place kabobs on the preheated grill.
  7. Grill for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
  8. Remove from grill and serve hot.

Notes

  • For picky eaters, you can grill the chicken and veggies on separate skewers.
  • Cut vegetables into larger chunks if your child prefers them less cooked or easier to handle.
