Description
A simple Greek salad recipe made fun for kids with star-shaped feta cheese. It’s quick to prepare and packed with fresh vegetables.

- 1 cup cherry tomatoes, halved
- 1 cucumber, peeled and cubed
- 1 bell pepper (any color), cubed
- 1/4 small red onion, finely diced (optional)
- 1/2 cup pitted Kalamata olives, halved
- 4 ounces block feta cheese
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice or red wine vinegar
- 1/2 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
Instructions
- Wash and prepare all the vegetables. Halve the cherry tomatoes. Cube the cucumber and bell pepper. Finely dice the red onion if using. Halve the olives.
- Cut the block of feta cheese into stars using a small cookie cutter. Use the scraps in the salad too.
- In a large bowl, combine the tomatoes, cucumber, bell pepper, and olives. Add the diced red onion if desired.
- In a small bowl, whisk together the olive oil, lemon juice or red wine vinegar, and oregano. Season with salt and pepper.
- Pour the dressing over the vegetable mixture and toss gently to coat.
- Add the feta stars and scraps to the salad. Toss very gently or place the stars on top.
- Serve the salad fresh.
Notes
- Cut vegetables into shapes using small cookie cutters for extra kid appeal.
- Serve components separately for picky eaters, allowing them to choose what they want.
- Let kids help wash vegetables or arrange the feta stars.
- Store leftover dressing and salad separately for best results.
