Description

A simple Greek salad recipe made fun for kids with star-shaped feta cheese. It’s quick to prepare and packed with fresh vegetables.


Ingredients

Scale
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled and cubed
  • 1 bell pepper (any color), cubed
  • 1/4 small red onion, finely diced (optional)
  • 1/2 cup pitted Kalamata olives, halved
  • 4 ounces block feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice or red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and prepare all the vegetables. Halve the cherry tomatoes. Cube the cucumber and bell pepper. Finely dice the red onion if using. Halve the olives.
  2. Cut the block of feta cheese into stars using a small cookie cutter. Use the scraps in the salad too.
  3. In a large bowl, combine the tomatoes, cucumber, bell pepper, and olives. Add the diced red onion if desired.
  4. In a small bowl, whisk together the olive oil, lemon juice or red wine vinegar, and oregano. Season with salt and pepper.
  5. Pour the dressing over the vegetable mixture and toss gently to coat.
  6. Add the feta stars and scraps to the salad. Toss very gently or place the stars on top.
  7. Serve the salad fresh.

Notes

  • Cut vegetables into shapes using small cookie cutters for extra kid appeal.
  • Serve components separately for picky eaters, allowing them to choose what they want.
  • Let kids help wash vegetables or arrange the feta stars.
  • Store leftover dressing and salad separately for best results.
