Description

Easy and fun pita pizzas loaded with hidden veggies, perfect for picky eaters.


Ingredients

Scale
  • 4 whole wheat pita breads
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup finely grated zucchini (squeeze out excess water)
  • ¼ cup finely diced bell pepper
  • ¼ cup finely chopped spinach
  • Optional toppings: pepperoni, mushrooms, olives

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lay pita breads on a baking sheet.
  3. Spread pizza sauce evenly over each pita.
  4. In a small bowl, mix the mozzarella cheese with the grated zucchini, diced bell pepper, and chopped spinach.
  5. Sprinkle the cheese and veggie mixture over the sauce on each pita.
  6. Add any optional toppings.
  7. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the pita are slightly crispy.
  8. Let cool slightly before slicing and serving.

Notes

  • Squeeze as much water as possible out of the grated zucchini so the pizzas don’t get soggy.
  • Finely chop or grate the veggies so they blend in with the cheese.
  • Let your kids help assemble the pizzas for extra fun!
