Description
Quick and easy egg salad pita pockets perfect for kid-friendly meals, designed to be simple, nutritious, and appealing to young palates.
Ingredients
Scale
- 6 large eggs
- 1/4 cup mayonnaise (or Greek yogurt for a healthier twist)
- 1 tablespoon Dijon mustard (optional, for a slight tang)
- 1/4 cup finely chopped celery (optional, for crunch)
- 2 tablespoons finely chopped fresh chives or dill (optional, for flavor)
- Salt and black pepper to taste
- 4–6 small whole wheat pita pockets
- Lettuce leaves or spinach (for serving)
- Cherry tomatoes, cucumber slices, or carrot sticks (for serving alongside)
Instructions
- Hard boil the eggs: Place eggs in a saucepan and cover with cold water. Bring to a rolling boil, then remove from heat, cover, and let stand for 10-12 minutes. Drain and immediately transfer eggs to an ice bath to cool completely.
- Peel and chop the eggs: Once cooled, gently peel the eggs. Coarsely chop them into small, bite-sized pieces. Leo prefers his egg salad a bit chunkier, while Mia likes hers finely mashed.
- Make the egg salad: In a medium bowl, combine the chopped eggs, mayonnaise (or Greek yogurt), and Dijon mustard (if using). Add the finely chopped celery, chives, or dill if you are including them.
- Season: Season with salt and black pepper to taste. Mix everything gently until well combined.
- Prepare the pita pockets: Carefully cut each pita pocket in half or cut a small slit along one edge to create a pocket.
- Assemble the pockets: Spoon the egg salad into each pita pocket. You can add a lettuce leaf or a few spinach leaves inside before filling for extra veggies.
- Serve: Serve immediately with a side of cherry tomatoes, cucumber slices, or carrot sticks for a complete meal.
Notes
- For picky eaters, you can mash the egg salad very smoothly so the texture is uniform.
- Greek yogurt can replace mayonnaise for a lighter, protein-packed version.
- Make a larger batch for meal prep; egg salad keeps well in the fridge for 2-3 days.
- Consider adding a pinch of paprika for color and a mild flavor boost.
