Description

These Kid-Friendly Edible Sandwich Cups are a genius trick to make mealtime fun and easy for busy parents. They are quick to prepare, nutritious, and designed to appeal to little palates, helping to avoid mealtime battles.

Ingredients

Scale
  • 8 slices of bread (whole wheat or white)
  • 2 tablespoons butter, melted
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 2 slices deli turkey or ham, finely diced
  • 1 tablespoon finely diced bell pepper (any color)
  • 1 tablespoon finely diced cucumber
  • 1 teaspoon fresh chives, minced (optional)
  • Pinch of salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. Using a rolling pin, flatten each slice of bread. This makes them more pliable for shaping.
  3. Cut each flattened bread slice into a circle using a large cookie cutter or the rim of a glass. Discard the crusts or save them for breadcrumbs.
  4. Brush one side of each bread circle with melted butter.
  5. Press each buttered bread circle into a muffin cup, butter-side down, forming a cup shape.
  6. In a small bowl, combine softened cream cheese, shredded cheddar cheese, finely diced turkey or ham, bell pepper, cucumber, and chives (if using). Season with a pinch of salt and pepper.
  7. Spoon about 1-2 tablespoons of the filling into each bread cup.
  8. Bake for 10-12 minutes, or until the bread cups are golden brown and the filling is warm and bubbly.
  9. Carefully remove the sandwich cups from the muffin tin and let them cool slightly before serving.

Notes

  • You can customize the filling with your child’s favorite ingredients. Try cooked chicken, tuna, or different vegetables.
  • For a sweeter version, fill with cream cheese and fruit preserves.
  • These cups are great for lunchboxes, picnics, or a quick snack.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the microwave or oven.
