Description

Easy and tasty cucumber and avocado sandwiches perfect for kids, even picky eaters!


Ingredients

Scale
  • 4 slices whole wheat bread
  • 1/2 ripe avocado
  • 1/4 cucumber, peeled and thinly sliced
  • Pinch of salt (optional)

Instructions

  1. Toast the bread lightly if you like (Mia prefers hers soft!).
  2. Mash the avocado in a small bowl with a fork. Add a tiny pinch of salt if using.
  3. Spread the mashed avocado evenly over two slices of bread.
  4. Arrange the cucumber slices on top of the avocado.
  5. Top with the remaining two slices of bread.
  6. Cut the sandwiches into fun shapes using cookie cutters (Leo loves stars!).

Notes

  • Make sure the avocado is ripe for easy mashing.
  • You can remove the cucumber seeds if your child doesn’t like them.
  • Try adding a sprinkle of nutritional yeast for a cheesy flavor boost.
