Easy and tasty cucumber and avocado sandwiches perfect for kids, even picky eaters!
Ingredients

- 4 slices whole wheat bread
- 1/2 ripe avocado
- 1/4 cucumber, peeled and thinly sliced
- Pinch of salt (optional)
Instructions
- Toast the bread lightly if you like (Mia prefers hers soft!).
- Mash the avocado in a small bowl with a fork. Add a tiny pinch of salt if using.
- Spread the mashed avocado evenly over two slices of bread.
- Arrange the cucumber slices on top of the avocado.
- Top with the remaining two slices of bread.
- Cut the sandwiches into fun shapes using cookie cutters (Leo loves stars!).
Notes
- Make sure the avocado is ripe for easy mashing.
- You can remove the cucumber seeds if your child doesn’t like them.
- Try adding a sprinkle of nutritional yeast for a cheesy flavor boost.
