  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1/4 tsp dried basil
  • Salt and pepper to taste
  • Optional: Small pasta (like ditalini or orzo) or cooked rice

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in the crushed tomatoes and vegetable broth. Add dried basil, salt, and pepper.
  5. Bring the soup to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until vegetables are very tender.
  6. Carefully transfer the soup to a blender (in batches if necessary) and blend until smooth. Alternatively, use an immersion blender directly in the pot.
  7. Return the blended soup to the pot. Stir in the heavy cream (or milk) and heat gently until warmed through. Do not boil after adding cream.
  8. If using, stir in cooked pasta or rice.
