- 1 cup cooked quinoa, cooled
- 1/2 cup almond butter (or other nut/seed butter)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a medium bowl, combine the cooled cooked quinoa, almond butter, honey or maple syrup, cocoa powder, and vanilla extract.
- Mix well until all ingredients are thoroughly combined and form a sticky mixture.
- Fold in the mini chocolate chips, if using.
- Press the mixture evenly into an 8×8 inch pan lined with parchment paper.
- Refrigerate for at least 30 minutes to allow the bars to set.
- Once set, remove from the pan using the parchment paper and cut into desired bar shapes.
- Store in an airtight container in the refrigerator for up to one week.
Notes
- For extra protein, you can add a scoop of unflavored protein powder.
- If your mixture is too dry, add a teaspoon of milk (dairy or non-dairy) at a time until it reaches a good consistency.
- These bars are great for lunchboxes or after-school snacks.
