- 1 tablespoon coconut oil (optional, for melting chocolate)
Instructions
- Break each whole graham cracker into two squares. Set aside.
- In a medium bowl, combine the peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth and well combined.
- Spread a generous amount of the peanut butter mixture onto one graham cracker square.
- Top with another graham cracker square to create a sandwich. Repeat with remaining graham crackers and peanut butter mixture.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring after each, until smooth and melted.
- Dip half of each graham cracker sandwich into the melted chocolate.
- Place the dipped graham crackers on a parchment-lined baking sheet or plate.
- Refrigerate for at least 15-20 minutes, or until the chocolate has set.
